Lemon Square Cheesecake Dessert Ideas + Recipe

"Mommy, it's like we're eating the same thing."

These are the exact words, my daughter told me. Complaining? Well, more of telling the truth. Since the pandemic started, I've been stocking up on as much food as possible. This is especially true for their snacks, because they eat like there's no tomorrow. Haha! I try to minimize kase outside contact, whether going to the grocery or food delivery. And, it's been over two weeks since our last trip to the grocery. So it's no surprise when my daughter told me that.

Time to hit the grocery, ASAP! But since I can't pa right now, I just made a twist to one of their favorite snacks! I always buy Lemon Square Cheesecake and we still have 2 packs left, so I made this Mango Banana Cheesecake Float and Ube Cheesecake Ice Cream Cake. And, it was a hit! Between husband and me, he's the dessert expert that's why I am so happy I nailed these.

Let me share with you the easy-peasy recipe, that you can also recreate.

Mango Banana Cheesecake Float

Ingredients:
6-10 pcs Lemon Square Cheesecake
1-2 pcs of Mangoes, sliced
2 pcs of bananas
1 250ml All Purpose Cream
1/2 can Condensed Milk

Directions:
1. Slice the Lemon Square Cheesecake into thin rounds. You can also crumble it if you want. Set aside.
2. Mix the All Purpose Cream and Condensed Milk. You can adjust the amount of milk according to your preference.
3. Puree or mash the bananas and mix in the cream and milk mixture.
4. In a container, take a tablespoon of the cream mixture and spread it at the bottom.
5. Layer the Lemon Square Cheesecake, followed by the cream mixture, then mango slices. Repeat.
6. Chill inside the fridge to set.
7. Top it with cubed or crumbled Lemon Square Cheesecake, mango and banana slices.
8. Serve and Enjoy!

Ube Cheesecake Ice Cream Cake

Ingredients:
1. 3 pcs Lemon Square Cheesecake
2. Ube Ice Cream

Directions:
1. Slice the Lemon Square Cheesecake into thin rounds.
2. Add a single layer of Lemon Square Cheesecake slices in a container, followed by a scoop of ube ice cream, flatten it.
3. Add another layer of Lemon Square Cheesecake Slices and another scoop of ube ice cream, flatten it.
4. Top it with cubed Lemon Square Cheesecake, a scoop or 2 of ube ice cream and sprinkle with cheesecake crumbs.
5. Serve and enjoy before it melts!

There you have it! Soo easy, right?
